HTST stands for
high temperature short time, and it is
a process by which liquids are heated,
as the name suggests, to a high temperature
for an extremely brief period of time.
This
heating kills virtually all dangerous
bacteria and results in a product that
requires fewer preservatives but has a
similar shelf life.
HTST is a distinct
pasteurization
process that uses plates and tubes to
heat the materials to optimum temperature.
HTST uses a 5-log system, meaning that
the product is exposed to heat five times
in order to destroy bacteria at an exponential
